Covering skills such as preparing squid, filleting round fish, curing, pané, sauté, pan and deep frying, and making short crust pastry, you’ll also get to devour the likes of Spanish empanadas with with chimichurri, crispy squid with a tomato salad and lemon mayonnaise, sea bass ceviche, calves liver with almond and saffron, or salt cod fritters

And with courses in fish, French and American bread, Cornish Italian cookery, vegetarian cookery, classic cakes, bushcraft, game, shellfish, filled pasta and simple suppers – you’ll learn to expertly produce and plate up a variety of fabulous foodstuffs.

Not only hosting a series of regular and exclusive dining events, the celebrated restaurant welcomes diners keen to sample simple, rustic cuisine created from the finest Cornish produce.

Tuck into summer spoils such as langoustines, spinach, purple basil and tomato aioli; pan roasted chicken with tomatoes and tarragon; or rare roast beef salad accompanied by green beans, new potatoes and horseradish cream.
